Delicious! I subbed in a shallot instead of the onion, otherwise made it as directed (without the bouillon). Added two good pinches of pepper and a big pinch of kosher salt at the end. Thanks for a tasty recipe!

I made this recipe but had no tomato paste. Still yummy.

I made this soup pretty much as outlined except I had no dried mushrooms to enhance the mushroom flavor—used baby bellas. Also used chicken broth because I could not readily find mushroom broth and vegetable broth is not a flavor I like. I added a bit of cayenne pepper to give it just a tiny bit of heat. Liked this soup and will add it to the regular fall/winter soup rotation. It’s a nice change from the traditional cream of mushroom soup.
