Just finished making this wonderful soup–I’m a fiend when it comes to soups! My husband isn’t a huge fan of traditional gazpacho–finds it too acidic for him. We had the supreme fortune to get fresh Silver King corn, yellow heirloom maters, Vidalia onions & Chilton county peaches. I subbed the Sherry w part PEACH balsamic & part honey/Meyer lemon living vinegar. Used basil & lemon olive oils. Even used a lemon thyme Camargue salt. I threw in about 1/3 cup of peach & used Vidalia onions (1/2 cup) let it marinated for about an hour while I did other things. Delicious–and that’s straight off the Vitamix w/o chilling!

Can’t wait to try both the cauliflower & yellow gazpacho. I had a good laugh at “by end of July pull up to AC”! Here in New Orleans its end of MAY for us (although the AC is on LONG before that! I had the most incredible gazpacho in Portugal a few years back. The gazpacho itself was very good BUT at the bottom: a cucumber & basil sorbet (although the restaurant insisted it had neither sugar nor the grape flavor I swear I tasted in it) w a luscious anchovy fillet. The combo was mind-blowing! I have yet to re-create it but I will!

About Gazpacho though–I tend to agree w Kenji’s definition of what constitutes *Gazpacho* www. seriouseats. com/andalusian-gazpacho-recipe. But I LOVE, LOVE a good cold soup and yours certainly fits the bill & then some!
The BEST GAZPACHO I had was in Lisbon–the soup was fine, but what made it stellar was the cucumber sorbet shaped quenelle w a divine anchovy at the bottom. Even my cuke hater husband loved it! You can imagine how adaptable this idea is w cukes, grapes, YELLOW watermelon anyone (to go w your divine soup)???? Now if I only had an ice cream machine –Cuisinart or Breville ice creamer maker my life would be complete!!!!

This was so unique, we loved it. I picked some wild violets from the yard and the purple was so pretty against the yellow. Definitely making it again for a special birthday next month.
