I’ve been a little nervous about my new Instant Pot, but I did the water test without blowing up the house, so I thought I’d try this soup because we do love potato soup here. I did it! And it was so good! The sour cream was a nice touch.

I didn’t expect it to become a must-have gadget in my kitchen, but it has! 🙂

This looks amazing!! I love my Instant Pot also. I’ve always had and used a pressure cooker because there are some things you can only cook under pressure at this altitude. I’m with you on the summer cooking thing, though. I never seemed to pull out my pressure cooker during the summer, but for some reason, the Instant Pot has become my favorite way to keep my kitchen cool in the summer.
