So glad you enjoyed it! The thickness issue could also be a brand situation — there’s a lot of variability among brands. Some are wonderfully thick and others are like, is this coconut milk or coconut water … lol.

Delicious! My coconut/feta mix came out much runnier than what shows in the photo, even though I added extra feta, so it wasn’t as pretty, but the flavors were wonderful. Next time I will add the coconut milk to the feta little by little to achieve the thicker consistency I was hoping for, rather than add the feta to the coconut milk as I did this time.
