Was so excited to try this recipe. Unfortunately my red lentils that were supposed to cook so quickly did not fully cook even after over half an hour. Usually lentil soup is a no brainer and I love making it so I was very frustrated! Then in searching Google for a reason why I learned that sometimes adding acidic ingredients (like tomato) too early can prevent the lentils from softening. Next time, lentils will be cooked separately then added! The flavor was great but our texture was just a little off. Thanks!
