Just made this (almost) exactly as written, using home-made taco seasoning, and it is a winner! I added 2 minced cloves of garlic along with the tomato paste, and one 14 ounce can of black beans rinsed and drained. I also omitted the vegetable oil, as enough fat comes out of the ground beef. This comes together so quickly and easily, and I always have the pantry ingredients on hand. Will serve it with sour cream, green onion, and grated cheese as garnishes for Cinco de Mayo. So good!! I love black beans with my tacos so I added it to the soup, yum!!!

This was so good! I made it with ground turkey and it was so flavorful (I thought it might not be because I used lean). We topped it with extra cheese and crushed tortillas.
